Zesty Lemon Chia Seed Granola Bars

Ingredients
- 1 1/2 Cups of porridge oats
- 1 cup unsweetened shredded coconut
- 1/2 cup almonds, roughly chopped
- 1/2 cup chia seeds
- 1 lemon zest
- 1/2 cup raw honey
- 1/2 cup almond butter,
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt, (omit if almond butter is salted)
Directions
- Line an 8 x 8” baking tray with parchment paper.
- In a large bowl, toss together the oats, coconut, almonds, chia seeds and lemon zest. Mix until combined.
- In a small saucepan melt the honey and almond butter together over medium-low heat.
- Stir until combined, remove from heat and immediately stir in the vanilla extract and lemon zest.
- Pour the honey and almond butter mixture in with the dry ingredients, stir until everything is well-combined.
- Transfer the mixture to the lined baking tray, using another piece of parchment paper and your hands press out the mixture firmly to the sides.
- Cover the tray and place in the freezer for at least 2 hours (ideally up to 4 hours), until firmed up (putting the bars in the freezer will make them easier to slice).
- Lift it out the hardened mixture from the baking tray and slice into 12 separate bars.
- Store in the refrigerator in a sealed container with parchment paper in between each bar to prevent sticking.
