Our Easter Banana Muffins are a celebration of spring flavours designed to provide a sustained energy release rather than a mid-hunt sugar crash. By using the natural sweetness of overripe bananas we’ve created a treat that is as kind to your gut as it is to your taste buds.

Ingredients
- 3 mature bananas (mashed)

sunflower oil 100 ml
- plant based milk 200 ml
-
vinegar 1 tbsp
- salt ½ tsp
-
dark muscovado sugar 200g
-
self-raising flour 300 g
-
baking powder 1 tsp
- vanilla syrup 1 tbsp

nibbed almonds or chopped walnuts
Directions
- In a large bowl, add mashed bananas and all the wet ingredients. Mix well.
- Gradually add sugar and mix until it dissolves.
- Gradually add flour, baking powder and a handful of nuts of your choice.
- Preheat oven to 200 degrees C.
- Prepare the muffin tin - place paper cups into it.
- Fill up the paper cups with dough. Bake for 15-20 min until ready.
