10 minutesThis simple and delicious pizza is great for summer days! It uses a simple and quick pizza dough, fresh cherry tomatoes and basil. Check our Easy pizza dough recipe made with best quality pizza flour. This recipe makes 2 pizzas.

Ingredients
- homemade pizza dough (check our recipe)
- cherry or plum tomatoes 200 g
-
extra virgin olive oil for drizzling
-
salt for taste
-
black pepper for taste
-
handful of fresh basil leaves (eventually you can use dried basil)
- 1 dairy-free mozzarella (you can choose traditional mozzarella)
-
Italian organic tomato passata
Directions
- Use previously prepared pizza dough. (check our recipe)
- Heat up the oven to 220C degrees.
- Divide the dough in 2 portions. On a floured surfaced, roll the dough. You can choose the shape of your pizza - round or squared.
- Add some tomato sauce on the dough, small pieces of cheese (we use vegan mozzarella), and small tomatoes cut on halves, sprinkle with salt and pepper.
- Bake it on a large tray (use baking paper) for 10-15 min. Keep an eye on your pizza - it may cook faster or needs a bit more time (depends on the oven). When pizza is almost ready (the dough becomes gold and crispy), tomatoes are roasted) top it with a few basil leaves and leave in the oven for 1-2 minutes longer.
- When ready, take it out from the oven, top it with a few more basil leaves and drizzle with olive oil. You can also sprinkle it with some extra dried basil, oregano and rosemary if you like herby flavours.
