Ingredients
- butter beans canned 300g (drained)
- pickled beetroots chopped 200g
- 1 onion chopped
- pickled cucumbers 4 chopped
- olive oil 3 tbsp
- salt for taste
- black pepper for taste
- mustard 2 tbsp
- cumin 1 tsp
Directions
- Chop the beets, cucumber, onion.
- In a large bowl, add drained butter beans. Add chopped veggies.
- Add 1 tsp cumin, mustard, salt, pepper, olive oil and mix.
- Serve as a meal or as side dish.
