Crispy Carrot Fries

Ingredients
- 500g Carrots
- 2 tbsp. Corn Flour
- 2 tbsp. Oil
- 1 tsp. Paprika
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- Chopped Parsley or Tarragon
Directions
- Preheat your oven to 220°C/ gas mark 7.
- Take the carrots and cut into long, even fries approx. 1cm thick.
- Transfer the fries to a large mixing bowl and toss to coat in the oil. Then add the corn flour, paprika, salt, and pepper and mix again.
- Place fries on a baking tray and cook for approx. 30-35 minutes or when they start to crisp up. Make sure to turn halfway.
- Once cooked, toss the hot carrot fries with chopped tarragon or parsley and extra salt, if desired. Serve immediately - Enjoy!
