Asparagus and spinach soup

Ingredients
- 1 onion

2 litres of vegetable stock
- 2 garlic cloves
- 3 tbsp olive oil
- 1 bunch of fresh green asparagus
- 2 handful of fresh spinach (or ½ cup of frozen)

½ tsp chilli flakes
- ½ freshly chopped parsley
Directions
- In a medium size pot heat up the olive oil. Add chopped onion and simmer for a few minutes. Add chopped garlic.
- Cut off the wooden ends on asparagus. Chopped the asparagus and place in the pot. Cover the pot and simmer for 10 min on medium heat (stirring from time to time).
- Add the vegetable stock and cook for 15 minutes.
- Add the spinach and cook for another 5 minutes - just bring the soup to boil. When ready set aside to cool down a bit.
- Add some fresh parsley and blend the soup until smooth. You can add 2 tbs of plant-based cream and salt for taste.
- Serve sprinkled with chilli flakes and freshly chopped parsley.
