Ingredients

Ceylon cinnamon powder 3-4 tsp
- wholemeal flour 300 g
- baking powder 2 tsp
- flaxseed for egg replacer 4 tsp + 10 tbsp water
- plant-based milk 200 ml
- sunflower oil 200 ml
- brown sugar 150 g
- pinch of nutmeg
- vanilla extract syrup 2 tbsp
- salt ½ tsp
- applesauce 2 tbsp
Directions
- Preheat the oven to 180 C.
- Spray the muffin tin well with cooking oil spray.
- In a large bowl, mix together flour, baking powder, salt and spices.
- In another bowl mix together sunflower oil, applesauce, flaxseed egg, sugar and milk.
- Pour the wet mixture into the dry mixture. Whisk together so all the ingredients combine well (don’t overmix).
- Pour the batter into the wholes in the muffin tin.
- Bake in the oven for about 25 minutes. Insert a toothpick to check if the batter is cooked (the toothpick will come out clean).
- Let the muffins cool down in the tin.
