- 1 tbsp RAWGORILLA Raw Organic Virgin Coconut Oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 thumb-sized piece of fresh ginger, grated
- 400ml Wild Elephant Organic Green Curry Coconut Milk, shaken well
- 500g cooked butter beans (about 225g dried, soaked and cooked as on the pack)
- 200g spinach or shredded kale
- Juice of 1 lime
- Salt, to taste
- Rice or flatbreads, to serve
Norādījumi
- Heat the coconut oil in a large pan over a medium heat. Add the onion and cook until soft.
- Stir in the garlic and ginger and cook until fragrant.
- Pour in the coconut milk and add the butter beans. Bring to a gentle simmer and cook until the sauce has thickened slightly.
- Stir in the spinach or kale and cook until wilted.
- Add the lime juice and season with salt.
- Serve with rice or warm flatbreads.
