What Is TVP? A Guide to Textured Vegetable Protein and How to Use It

Walk past the bags of dry, pale chunks and mince labelled TVP and you might have no idea what to do with them. Yet textured vegetable protein is one of the cheapest, most useful and most protein-packed plant foods you can buy. If you have never cooked with it, or you are not quite sure what it even is, here is a clear, honest guide to TVP: what it is, how to cook it, and whether it is good for you.

 

What is TVP?

TVP stands for textured vegetable protein, though a more accurate name is textured soya protein, because it is made from soya. It is produced from defatted soya flour, which is what remains after the oil has been extracted from soya beans. This protein-rich flour is cooked, pressed and shaped under pressure, then dried into the light, dry pieces you see on the shelf. The result is a shelf-stable food that comes mainly in two forms: fine mince, and larger chunks.

On its own, dry TVP has very little flavour and a firm, spongy texture once rehydrated, which is actually one of its great strengths. Like a blank canvas, it soaks up whatever flavours you cook it with.

How do you cook TVP?

This is the part that puts people off unnecessarily, because it could hardly be simpler. Dry TVP needs rehydrating before use. Simply cover it with boiling water or, better still, hot stock, and leave it to soak for around 10 to 15 minutes until soft and plump. The mince rehydrates quickly, while larger chunks take a little longer and benefit from simmering. Once softened, drain off any excess liquid and it is ready to cook with.

Because TVP is so absorbent, the secret to making it delicious is flavour. Rehydrate it in a well-seasoned stock, or add it to a punchy sauce, and season generously. From there, use it just as you would mince or chunks of meat.

What can you make with it?

TVP is endlessly versatile. The mince works beautifully in bolognese, chilli, cottage pie, tacos, lasagne and burgers, wherever you would normally use minced meat. Is TVP healthy?

TVP has a lot going for it nutritionally. It is very high in protein, and because it is made from soya, it provides all the essential amino acids, making it a complete plant protein, which is relatively unusual in the plant world. It is naturally low in fat, contains fibre, and is free from cholesterol. For anyone building meals around plant-based protein, it is a genuinely valuable staple.

It is worth being straightforward about the fact that TVP is a processed food, in the sense that soya beans are turned into flour and then shaped. That said, plain TVP is a simple product, often just soya with nothing added, which sets it apart from many heavily processed meat alternatives that come with long ingredient lists. As with any soya food, it is best enjoyed as part of a varied, balanced diet. Soya has been very widely studied and is considered a healthy food for most people as part of a mixed diet.

Why TVP is worth keeping in the cupboard

Beyond the nutrition, TVP is simply practical. It is inexpensive, especially compared to meat and to ready-made meat substitutes. It has a long shelf life when kept dry, so a bag sits happily in the cupboard until you need it. It is light to store, quick to prepare, and a reliable way to add protein and substance to a meal at short notice. For budget-friendly, plant-based batch cooking, it is hard to beat.

TVP might look unassuming in its dry form, but it is one of the most useful plant proteins around: cheap, high in protein, long-lasting and wonderfully versatile once you know the simple trick of rehydrating and seasoning it well. Whether you use the mince in a chilli or the chunks in a curry, it is well worth getting to know. Give it a go, season it boldly, and this humble storecupboard staple may quickly become a regular in your kitchen.
