How to use them
Toast them in a dry pan until golden and fragrant, then scatter over salads, noodles, stir-fries and roasted veg, or press into bread and cracker tops. Blend into your own tahini and hummus, or stir into dressings and dips. Store cool, dark and airtight.
Sesame Seeds FAQs
What's the difference between hulled and unhulled sesame? Hulled seeds have the outer skin removed, so they're paler, milder and smoother, which suits tahini and baking. Unhulled seeds keep their skin, so they're earthier and higher in fibre and calcium. Both work in most recipes.
What is black sesame? It's the unhulled seed of a different sesame variety, with a bolder, slightly bitter, more intense flavour and a striking colour. It's popular in East Asian cooking and as a garnish on noodles, sushi and bakes.
Are sesame seeds a good source of calcium? Yes, sesame is a well-known plant source of calcium, with unhulled seeds higher than hulled because much of the calcium sits in the skin. They also provide protein, iron and healthy fats.
Should I toast sesame seeds? Toasting deepens the flavour and brings out the nuttiness, which is why most recipes call for it. Dry-toast in a hot pan for a minute or two, stirring, until golden, and watch closely as they catch quickly.
How should I store them? Keep them in an airtight container somewhere cool, dark and dry. Sesame's natural oils keep best sealed and out of sunlight; tahini can be refrigerated once opened and stirred before use.
