Agave syrup Agave syrup or agave nectar, is a plant-based sweetener made from a different species of plant called agave (Agave Tequillana, Agave Salmiana, Agave Americana). To make agave syrup from the Agave Americana and Agave Tequilana, the leaves are cut off the plant (the plant is seven to fourteen years old). The juice is then extracted from piña - the core of the plant. Later the juice is filtered and heated until it becomes a thick liquid. In case of Agave salmiana, the syrup is made differently. As the plant grows, it starts to develops a stalk called a quiote. The stalk is cut off before it fully grows, creating a hole in the middle of the plant. This hole fills with a liquid called aquamiel. The liquid is collected daily and heated up. Agave syrup may have different colours from light to dark brown, depending on the degree of processing. Nutritional value of agave Agave syrup composition depends on the species from which the syrup was made. In A. tequilana, the syrup contains up to 60% fructose, 20% glucose, and little bit of sucrose. In agave syrup made from A. salmiana, sucrose is the main sugar. Agave syrup also contains very small amounts of vitamin C and B vitamins, and minerals such as calcium, potassium, and selenium but the serving size provides little benefit from these micronutrients. It is used as topping and sweetener for tea, coffee, porridge, oatmeal, waffles and pancakes. How is maple syrup made? The sap is collected from drilled trunks of the tree. Then the sap is heat up to evaporate most of the water, leaving the concentrated syrup. Nutritional value of maple syrup Maple syrup consists mainly of sucrose. Stand in front of a shelf of salt these days and it can be baffling. Pink, grey, black, fine, coarse, flaky, cheap and expensive, all promising something a little different. The truth is that most salts are chemically very similar, but they vary in crystal size, mineral traces, how they are made and, above all, what they are best used for. Here is a clear guide to the main kinds of salt and which one to reach for depending on the job. First, a quick reality check Almost all edible salt is mostly sodium chloride. The differences between them, the trace minerals and subtle flavours, are real but small, especially given that we use salt in tiny amounts. So while the fancier salts have genuine charms, it is worth choosing them for their flavour, texture and how they suit a particular task, rather than expecting big health differences. Whatever salt you choose, health guidance is the same: keep your total salt intake within sensible limits. Everyday table and cooking salt Standard table salt is fine-grained, inexpensive and dissolves quickly, which makes it a practical all-rounder for cooking. It is usually heavily refined and often contains anti-caking agents to keep it free-flowing, and in some countries it is fortified with iodine. Its fine, even grains make it reliable for baking, where precise, consistent seasoning matters. If you prefer something less processed, a fine natural salt does the same everyday job without the additives. Himalayan pink salt Himalayan pink salt is a rock salt, mined rather than harvested from the sea, and its pretty pink hue comes from traces of minerals such as iron. It is unrefined and additive-free, with a clean flavour, which makes it a lovely everyday choice. Celtic and grey sea salt Celtic sea salt, traditionally hand-harvested along the coast of Brittany, is unrefined and keeps its natural moisture, giving it a soft, greyish colour and a gentle, mineral-rich flavour. It is a beautiful salt for cooking and, especially, for finishing, sprinkled over a dish just before serving to add flavour and a little texture. Flaky finishing salt Flaky sea salt has large, delicate, pyramid-shaped crystals that are made for finishing rather than cooking. Scattered over a finished dish, a caramel, a piece of roasted meat or even chocolate, it delivers little bursts of salinity and a satisfying crunch. It would be wasted stirred into a pot, where it simply dissolves, so keep it for the final flourish. Smoked salt for a barbecue depth If you love a savoury, smoky flavour, smoked salt is a wonderful thing to keep in the cupboard. It is made by slowly cold-smoking sea salt over wood, so the smokiness is entirely natural rather than a bottled flavouring. Hickory is a classic choice, giving a rich, mellow, barbecue-like character. You would not usually season a finished plate with them, but for these jobs they are exactly right. One salt that is not for eating: Epsom salt It is worth clearing up a common source of confusion. Epsom salt is not a culinary salt at all. It is magnesium sulphate, a completely different compound, traditionally dissolved in a warm bath to soak tired muscles and aid relaxation. To pull it all together: for everyday cooking and baking, a fine table or fine Himalayan salt is your reliable choice. For finishing a dish with flavour and texture, reach for a flaky or moist grey Celtic salt. For salt grinders and brining, use coarse Himalayan or rock salt. For vegan cooking that wants an eggy flavour, keep some black salt to hand. And for a relaxing soak rather than the dinner plate, that is where Epsom salt comes in. Different salt for different needs There is no single best salt, only the right salt for the job. Once you know that fine salts are for cooking, coarse salts are for grinders and brines, flaky and grey salts are for finishing, black salt is for that special eggy note, and Epsom salt is strictly for the bath, the shelf stops being confusing. One of the researchers called it a "seismic" threat to public health. Here is what the study found, what it does and does not prove, and what it means for how you eat. First, what counts as ultra-processed? Not all processing is bad. Freezing vegetables, milling flour, drying fruit, these are processing too, and they are fine. Ultra-processed food is a specific category: industrially made products built largely from substances you would not find in a home kitchen, things like protein isolates, modified starches, emulsifiers, artificial sweeteners, colours and flavourings. Think packaged snacks and crisps, fizzy drinks, most breakfast cereals, ready meals, mass-produced bread and a lot of "diet" and protein bars. The giveaway is usually a long ingredients list full of names you do not recognise. This matters because ultra-processed food is now the bulk of what many of us eat. In both the UK and US, more than half of the average person's daily calories come from it. What the study actually found This was not one small experiment. Forty-three scientists from six continents spent years reviewing more than 100 long-term studies covering close to 10 million people. Across that evidence they found ultra-processed food linked to more than 30 negative health outcomes, spread across the whole body: Heart and circulation: higher risk of heart disease and stroke. Metabolism: higher risk of obesity and type 2 diabetes. Liver: links to non-alcoholic fatty liver disease. Brain and mood: associations with anxiety, depression and even Parkinson's disease. Other systems: links to certain cancers, kidney problems and early death. Of the 104 long-term studies they examined, 92 reported a higher risk of one or more chronic conditions. A separate US analysis went further still, tying ultra-processed food to more than 124,000 preventable deaths over a two-year period. An honest word about what this proves It is worth being straight about the science. Most of this research is observational, which means it shows a strong and consistent association between eating a lot of ultra-processed food and getting ill, but it cannot prove that the food is the sole cause. People who eat more ultra-processed food often differ in other ways too. That said, when this many studies, across this many people, all point the same direction, the pattern is hard to wave away. The researchers were clear that the weight of evidence now justifies treating ultra-processed food as a serious public health issue, not a fad worry. So what do you actually do about it? The encouraging part is that the fix is not complicated or expensive. You do not need a perfect diet or a cupboard full of supplements. You just need to shift the balance towards food that has had less done to it. A few simple moves: Read the ingredients, not the health claims on the front. A short list of recognisable ingredients is a good sign. Lean on single-ingredient staples: oats, rice, lentils, beans, nuts, seeds, fruit and vegetables, plain yoghurt. Cook a little more from scratch. It does not have to be elaborate; a pot of porridge or a tray of roast veg counts. Be wary of products that market themselves as healthy. Plenty of "high-protein" and "low-sugar" snacks are still ultra-processed. Make swaps, not sacrifices. Trade the flavoured cereal for oats and fruit, the snack bar for nuts, the fizzy drink for sparkling water.
