Rinse, then simmer
Whole quinoa carries a natural saponin coating that tastes bitter, so rinse it in a fine sieve under cold running water until the water runs clear. Then cook with 1 part quinoa to 2 parts water: bring to the boil, cover and simmer for about 15 minutes, rest for 5 minutes off the heat, and fluff with a fork. Flakes cook in minutes, and puffs need no cooking at all.

Why do I need to rinse quinoa? Whole quinoa has a natural saponin coating that tastes bitter or soapy. Rinsing it under cold water in a fine sieve until the water runs clear washes it off. Some packs come pre-rinsed, but a quick rinse never hurts.
What's the difference between white, red and black quinoa? White is the softest and fluffiest, the everyday all-rounder. Red is firmer and holds its shape, good for salads. Black is the earthiest and crunchiest. Tri-colour gives you all three.
Is quinoa gluten-free? Yes, quinoa is naturally gluten-free, which makes it and quinoa flour a useful staple for coeliac and gluten-free diets.
