• Made properly: traditional fermentation with Korean chilli flakes (gochugaru), crisp cabbage and aromatics – no preservatives or synthetic vinegar.

• Raw and live: unpasteurised, with the active cultures intact.

Stir it into fried rice, stuff it into a grilled cheese, serve it with eggs – or eat it from the jar. Keep refrigerated.

What is kimchi? It's a Korean staple of cabbage and vegetables fermented with chilli, garlic and aromatics. The fermentation gives it that tangy, gently fizzy, deeply savoury flavour, and leaves it full of live cultures when it's raw.

Is your kimchi vegan? Traditional kimchi often uses fish sauce or shrimp, but the ones we stock here are vegan-friendly. Check the individual product page to confirm before you buy.

How spicy is it? It ranges from gently spiced to properly hot, like the Hot 'N' Smoky and HOT Red One. The product page gives you a sense of the heat level for each.

How do I store it and keep it alive? Keep it refrigerated and use a clean fork each time, pressing the contents back under the liquid. To keep the live cultures, add it to cooked dishes at the end rather than cooking it in.
