Sauerkraut
Most supermarket kraut is pasteurised so it can sit on a shelf for years, which kills the live cultures and softens the cabbage. Ours is raw, unpasteurised and properly crunchy.

FAQs
What is sauerkraut? It's finely shredded cabbage that's been fermented with salt. The salt draws out the moisture and natural bacteria turn the sugars into lactic acid, which gives kraut its tang and keeps it preserved. Cabbage, salt and time, that's really all it takes.
What's the difference between raw and pasteurised sauerkraut? Pasteurised kraut has been heated, which kills off the live bacteria and softens the texture so it can sit on a shelf. Raw kraut like ours skips the heat, so the live cultures and the crunch stay intact. That's why you'll find ours in the chiller, not the ambient aisle. Our magazine goes deeper on why a pasteurised supermarket pickle is biologically dead.
Which sauerkraut should I choose? If you're new to it, start with a plain one like the Morgiel Organic Plain (680g). Want something with more going on? Try the Biona Golden Turmeric or the Loving Food Caraway & Juniper. For a bit of heat, the Spicy Cortido or Fermary Smoke & Spice are the ones to reach for.
Is sauerkraut good for your gut? Raw, unpasteurised kraut contains live cultures and is a natural source of fibre, which is why a lot of people eat it as part of looking after their gut. We can't make health claims beyond that, but a spoonful with a meal is an easy way to work fermented food into your day. Read more on why fermented foods belong in a healthy diet.
Is your sauerkraut vegan? Yes. Everything in this collection is made from cabbage, salt and plant-based flavourings like caraway, beetroot or turmeric. Check the individual product page if you want to confirm the exact ingredients.
How do I eat it? Straight from the jar is fine. It's good piled on hot dogs, burgers and sausages, stirred through a salad, layered into a sandwich or toastie, or served alongside a stew or roast. If you want to keep the live cultures, add it to cooked food at the end rather than cooking it in.
How should I store it? Keep it in the fridge and use a clean spoon each time. Press the cabbage back under the liquid after serving so it stays covered, and it'll keep its crunch for several weeks once opened. Check the date on the jar for specifics.
