However, because these products are raw and unpasteurised, they behave differently than the sterile, mass-produced jars you find on supermarket shelves. One question we occasionally hear is: "Why is there a tiny spot of rust or discolouration on the inside of my lid?" If you’ve noticed this, don’t panic. It isn’t a sign of a "bad" batch; it’s actually a sign of a very active one. Here is everything you need to know. The Chemistry of a Live Jar Traditional sauerkraut is made through lacto-fermentation. During this process, natural bacteria convert sugars into lactic acid.
