Jun is an almost mythical beverage, known as the Champagne of Kombucha and thought to originate in Tibet, where it was traditionally made by fermenting tea with honey, to create a naturally effervescent and refreshing beverage. Stories abound of legendary samurai warriors riding through the Himalayan mountains with this sacred elixir to boost their energy and spirit. Loving Foods Jun-Kombucha is naturally cultured using organic green tea and organic honey, using a symbiotic culture of bacteria and yeast (SCOBY) to drive the fermentation process. This technique is a time-honoured method of preparation, resulting in a drink packed full of vitamins, enzymes and probiotics, prized by cultures throughout the world, who value its ability to promote good health and wellbeing. Our Jun-Kombucha is fermented using organic honey, a crucial nutrient for the growing bacteria to survive and multiply. During fermentation, the symbiotic culture of bacteria and yeast (SCOBY), consume the honey and in the process, produce wonderful strains of beneficial bacteria, vitamins, minerals and enzymes. The final product only contains a small amount of the original sugar, as most of it is consumed by the bacteria and yeast. As another lovely side benefit, they also make the drink nice and fizzy. Additionally, all of the water used in our drinks is double filtered using both active ceramic and granular activated carbon to remove impurities and for a great taste. Jun is a fantastic, tasty, clean alternative to commercially available fizzy drinks or alcoholic beverages.
