Festive cupcakes with spice and nuts

Ingredients

self-raising flour 150 g
- brown sugar 140 g
- plant-based butter 150 g
-
plant-based milk 60 ml
- vanilla extract 1 tbsp

1 tsp ground ginger
-
1 tsp cinnamon
-
1 tsp cardamom
- 3 tbsp broken walnuts
- powder sugar for topping (optional)
Directions
- Heat the oven to 180 C.
- Prepare a 12-hole muffin tin with cupcake paper cases.
- Beat the butter and sugar together for a fluffy mixture. Add the flaxseed and vanilla.
- Add the flour and spices, milk, walnuts and mix until you have a smooth batter.
- Use a tablespoon to pour the batter into the cupcake cases (two-thirds full).
- Bake for 15 mins. The cupcakes should be firm and golden brown.
