Chickpea, Feta & Avocado Salad

Ingredients
- 400g Chickpeas
- 2 Avocados - pitted & diced
- 100g Feta Cheese or Vegan alternative
- Chopped coriander
- Salt & Pepper to taste
- 1 Garlic clove
- 3 tbsps. Olive oil
- 3 tbsps. Lemon juice
- Optional additional veggies - tomato's, cucumber, red onion etc
Directions
- Soak chickpeas in water overnight. Drain and rinse.
- Put in pan and cook for approx. 25 min. Cook for longer if you want them softer.
- In a small bowl, combine olive oil, lemon, garlic and salt and pepper. Whisk or mix to make the dressing.
- In a larger bowl mix the cooked chickpeas, diced avocado, feta and coriander. Plus any additional ingredients.
- Add dressing to taste, toss to coat - Voila!
