Hearty lentil soup with veggies

Ingredients
- lentils 500g
- 1 large onion (chopped)
- 2 cloves garlic
- 1 tsp garlic powder
- bay leaves whole 2
- 2 fresh carrots (chopped)
- water 2 litres
- sea salt ½tsp
- black pepper for taste
- 1 green pepper (chopped)
- 1 large potato (chopped)
- organic ground cumin 1 tsp
- organic paprika 1 tsp
- extra virgin olive oil 3 tbsp (to simmer the veg)
- boiled water if needed
- organic tomato pulp 4 tbsp
Directions
- In a medium size pot cook lentils in water with bay leaves, garlic cloves and salt for 15 min.
- Add chopped carrots and chopped potatoes. Cook more 15 min.
- On a pan add olive oil, onion and green pepper. Add tomato pulp. Simmer for 15 minutes until soft.
- Incorporate the pepper and onion into cooked lentils with veg. Add spices (cumin and paprika) and cook for more 5-10 min.
- Add black pepper and salt for taste.
