Herbs FAQs
What's the difference between a herb and a spice? Herbs are the leafy green parts of a plant, like basil, oregano and thyme. Spices come from other parts such as seeds, bark, roots and berries. For those, see the spices collection.
Can I use dried herbs instead of fresh? Yes, but dried herbs are more concentrated, so use roughly a third of the amount a recipe asks for in fresh, and add them earlier in cooking to let the flavour develop.
How should I store dried herbs? Keep them airtight, away from heat, light and moisture. They hold their flavour best within a year or so, after which they gradually fade.
Can I make tea from these herbs? Many of them, yes. Mint, chamomile and similar botanicals steep into simple digestive and calming infusions.
