30 minutesThis Beans and rice salad is hearty and healthy! It can be made ahead of time to eat alone or to go with whatever you are serving. It is also perfect picnic or barbecue food in summer.

Ingredients

Rice 200 g (cooked and rinsed)

Red beans (or black beans) 200 g (cooked and rinsed)
- 1 yellow bell pepper
- 1 red bell pepper
- 1 sweet onion (chopped)
- 1 lime (juiced)
- fresh coriander or parsley for topping
- a pinch on chilli

ground cumin ½ tsp
- 3 tbsp extra virgin olive oil
- salt and pepper for taste
Directions
- Chop the onion and peppers.
- In a large bowl, place all the ingredients: rice, beans, chopped onions and peppers, spices, olive oil and lime juice. Using a fork or spoon combine them gently.
- Serve topped with finely chopped fresh parsley or coriander.
