Ingredients
- 2 cans black-eyed peas, drained and rinsed
- 2 ripe tomatoes, chopped
- 1 cucumber, diced
- 1/2 red onion, finely diced
- 3 scallions, sliced
- 1/4 cup sliced pepperoncini or banana peppers
- 4 oz feta, crumbled
- 1/4 cup chopped parsley
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt
- pepper
Directions
- In a large bowl, combine black-eyed peas, tomatoes, cucumber, red onion, scallions, and peppers.
- Whisk the dressing and pour over. Toss gently.
- Fold in most of the parsley, then top with crumbled feta and the remaining parsley. Best after 15 min for the flavors to meld.
