Cacao Nib & Nut Cookies

Ingredients
- 250g Almond Flour
- 1/2 tsp. Baking Soda
- 125g Butter or Vegan butter
- 3 tbsps. Maple Syrup
- 1/2 tsp. Salt
- 1 tsp. Vanilla Extract
- 100g Cacao Nibs
- 100g Chopped Nuts
Directions
- Line a baking tray and pre heat the oven to 180C/Gas mark 4.
- Take a large mixing bowl and combine almond flour, salt and baking soda, mixing well.
- In a separate bowl add melted butter, maple syrup and vanilla extract, mix together.
- Combine the wet and dry ingredients, make sure to mix thoroughly until no trace of flour remains.
- Using a rubber spatula, fold the cacao nibs and chopped nuts into the mixture.
- Form 10 small rounded balls with the dough and place them on the baking tray, whilst flattening slightly.
- Bake in the oven for 10-12 minutes, or until golden brown around the edges.
- Remove from oven and allow to cool before eating.
