15 minutesHealthy and nutritious chickpea salad packed with protein and fibre. Excellent option for lunch and for dinner.

Ingredients

500 g dried chickpeas
-
1 tsp ground cumin
-
2 tbsp olive oil
- 1 fresh green chilli
- 1 lemon or lime juiced
- 1 onion (chopped)

1 tsp ground paprika
- salt (for taste)
- 1 red pepper (chopped)
Directions
- Place the dried chickpeas in a large bowl and cover completely with cold water (there should be a few cm of water over the chickpeas).Allow to soak overnight, or about 12 hours.
- Drain the water and rinse the chickpeas a couple of times with fresh water.
- Place them in a medium size pot, add fresh water again, garlic clove, bay leaf and some salt and cook for 90 minutes.
- Drain the chickpeas and place in a medium size bowl to cool down.
- Add chopped onion, chopped bell pepper, green chilli, olive oil, lemon juice, salt, cumin and paprika. Mix all the ingredients!
- Serve with some chopped parsley or fresh coriander.
