Christmas cake with dried fruits

Ingredients
- 200 g raisins
- 100 g sultanas
- 100 g dried cranberries (chopped)
- 100 g dried apricots (chopped)
- 100 g dried currants (chopped)
- 100 g dried figs (chopped)
- 100 g dates (chopped)
- 2 tbs orange peel
- 2 tbsp lemon peel
- 100 g glace cherries (chopped)
- 200 g muscovado sugar
- plant-based butter 350 g
- 100 ml water
- plant-based milk 300 ml
- 100ml port wine or brandy
- 2 tsp sodium bicarbonate
- 250g self-raising flour
- 250 g plain wholemeal flour
- 3 tsp baking powder
- 100 g ground almonds
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp ground allspice
Directions
- In a large pot mix the dried fruits, glacé cherries, orange zest, citrus peel, sugar, plant-based butter, plant-based milk, water, and port wine. You can also use sherry or brandy if you don't have port wine. Bring the mixture to boil and simmer for 15 minutes. Stir it all the time.
- Preheat the oven 150C. Prepare the baking tin (round, 24cm): grease it and layer it with a vegetable paper.
- Slowly add the bicarbonate of soda to the fruit mixture. Be careful as it will fizz and rise!
- Add the flours, spices and ground almonds to your mixture. Mix the mixture well so that all ingredients are well combined and there are no lumps of the flour.
- Pour the mixture into the baking tin spread it evenly to the sides.
- Bake for at 1.45 min minutes to 2 hours. Check with the skewer if the cake is ready or still raw inside. It is ready when an inserted skewer comes out clean. If it's still wet inside leave in the oven for another 5 minutes. Check again and repeat if needed, until the cake is well cooked.
- Tip: You can sprinkle the cake with more brandy.
