Ingredients

400 g dried organic mung beans
- 1 medium onion, finely diced
- 1 celery stalk, finely diced
- ½ leek, sliced.
- 3 garlic cloves, minced
- 1 tablespoon dried oregano

80ml olive oil

1.5l water or vegetable stock
- Juice of 2 lemons
- 1.5 tsp salt
- ¼ tsp black pepper
- Handful of fresh parsley, chopped
Directions
- Rinse the mung beans thoroughly. Place them in a bowl, cover with cold water, and soak for about 2 hours.
- Heat the olive oil in a large pot over medium heat. Add the onion, celery, leek and garlic. Sauté for about 5–7 minutes until softened and fragrant.
- Stir in the oregano and cook for another minute.
- Drain the soaked mung beans and add them to the pot along with the water or vegetable stock.
- Bring the soup to a boil, then reduce the heat to medium-low. Cover and simmer for 30–40 minutes, or until the beans are tender.
- Stir in the salt, pepper, lemon juice, and fresh parsley. Taste and adjust seasoning if needed. Serve warm with crusty bread and a drizzle of o
