Mushroom Soup

30 minutesThis comforting soup is made with dried mushrooms, onions, and a bit of dairy-free cream. You can top it with some fried fresh mushrooms and freshly chopped parsley. Delicious!

Ingredients

100 g dried mushrooms
- 1 large onion (chopped)

1,5 litre of vegetable stock

3 tbsp olive oil
- 0,5 l of boiling water (for the mushrooms)

4 tbsp of soy cream
Directions
- In a small bowl, cover the dried mushrooms with water. Set aside for 15 min.
- In a medium size pot, add olive oil and chopped onion. Saute fr a few minutes.
- Add the mushrooms with water. Cook for 5 min.
- Add the stock and cook for 25 minutes.
- When ready, blend all the ingredients. Add soy cream, salt and pepper for taste and mix.
- Serve topped with chopped parsley. You can also chop a few fresh mushrooms and fry them for the soup garnishing.
