Ingredients
- quinoa (cooked) 2 cups
- tinned kidney beans (drained) 1 tin
- tinned corn (drained) 1 tin
- chives (chopped)
- fresh coriander (chopped)
- mustard 2 tbs
- cayenne pepper 1 pinch
- extra virgin olive oil 2 tbsp
- balsamic vinegar 2 tbsp
- coriander powder 1 tsp
- sea salt ½ tsp (for taste)
Directions
- Preparing the quinoa: cook it in water with a bit of salt for about 20 minutes. Set aside to cool down.
- Add all the ingredients into a large bowl. Add spices, olive oil and vinegar.
- Mix all the ingredients together.
- Serve topped with freshly chopped coriander.
