Simply the Zest Gluten Free Lemon Shortbread

Ingredients
- 100 g Almond Flour
- 30g Coconut Sugar
- 3 tbsps. Butter or Dairy free alternative
- 1 tbsp. Lemon Peel/Zest
- 1/4 tsp. Salt (optional)
- 1/2 tsp. Vanilla Extract
Directions
- Line a baking tray and pre heat the oven to 180C/Gas mark 4.
- In a large bowl, mix soft butter with the lemon zest and vanilla extract.
- Add in the sugar, then flour and salt to the mixture. Stir well until mixture is smooth and well combined.
- Roll dough into 10 evenly sized balls, then place them on the baking tray. Flatten them halfway down. Optional - sprinkle some sugar over the top before baking.
- Bake the shortbread in the oven for 10-12 minutes, until they start to turn light golden brown on top.
- Remove from oven and allow to cool before eating. Enjoy!
