Truly Scrumptious Vegan Scones

Ingredients
- 350g Self-raising Flour

3 tbsp. Sugar
-
1 tsp. Baking Powder
- 100g Vegan Spread
- 150ml Soy Milk (or any plant milk alternative)

75g Raisins
- 1 tbsp. Vanilla Extract

1/4 tsp. Salt
- 1 tbsp Maple Syrup (for glaze)
- 1 tbsp. Soy Milk (for glaze)
- Jam and Vegan Cream alternative, to serve
Directions
- Preheat oven to 220c / Gas mark 7 and line a baking tray.
- In a large bowl combine the flour, sugar, salt and baking powder.
- Rub vegan butter into the flour mix, using a fork or your fingertips until it resembles breadcrumbs. Alternatively use a food processor.
- Gradually add the soy milk, vanilla extract, and raisins, stirring to create a loose, sticky dough.
- Use flour to lightly dust your surface and gently roll out the scone dough until approx. 1 inch thick.
- Take a 3 inch cutter dipped in a bit of flour to cut out circles in the dough and add them to the baking tray.
- Combine the soy milk with maple syrup and brush the mixture on the tops of the scones for a nice golden brown top once baked.
- Bake in the over for 10-12 minutes until the tops of the scones are golden brown.
- Allow to cool for 10 minutes and enjoy the scones warm or cold. Serve with jam and vegan cream - scrumptious!
