Whole Green Beans with Cherry Tomatoes and Garlic

Ingredients
- 400 g green beans, trimmed
- 200 g cherry tomatoes, halved
- 3 garlic cloves, finely chopped
- 2 tbsp fresh flat-leaf parsley, chopped
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar, (or lemon juice)
- ½ tsp chilli flakes, to taste
- Salt
- freshly ground black pepper
Directions
- Blanch the green beans in boiling salted water for 3–4 minutes until just tender, then drain and refresh under cold water to keep them bright.
- Warm the olive oil in a pan over a medium heat and gently fry the garlic and chilli flakes for 1–2 minutes until fragrant and just golden — don't let the garlic burn.
- Add the cherry tomatoes and cook for 2–3 minutes until they start to soften and blister.
- Tip in the beans, add the vinegar, and toss to coat and warm through. Season, scatter with parsley and serve warm or at room temperature.
