This is because it is difficult to separate the germ and bran from the endosperm of rye, meaning rye retains a larger quantity of nutrients than other similar grains on a weight for weight basis. Rye grain itself has plenty of uses that will keep you busy and other preparations such as Rye flour that opens up an entirely new chapter in baking.
Cooking with Organic Rye Grain
Rye is commonly used to make rye bread, which is denser and more compact than the equivalent loaf made with a wheat flour, as the gluten in rye is less elastic. Other than bread, casseroles and stews can only be made better with the inclusion of rye and you can even boil the groats and use them as a rice substitute in your favourite dishes; It really does make for a pleasant change!
