High protein wheat grain is milled from hard grain wheat, meaning its consistency is ideal for homemade or professional breadmaking. Higher protein leads to more gluten formation. Gluten is what gives bread and pizza its characteristic structure with a chewy, elastic texture.
This wheat grain flour is rich in protein, containing over 15g per 100g! It’s also a good source of fibre, and several minerals, especially compared with plain refined white flour.
