Cous cous salad with tomato and cucumber

Ingredients

cous cous 300 g
- cherry tomatoes 1 package
- cucumber 1
- onion 1 chopped

extra virgin olive oil
- lemon 1 juiced

Celtic salt for taste

cracked black pepper for taste

fresh or dried basil
-
fresh or dried peppermint
-
fresh or dried parsley
Directions
- In a large bowl, add dry cous cous. Pour boiling water over it, leave 1 cm of water on top of cous cous. Add salt, and some olive oil, mix and leave to sit for 10 minutes.
- When ready (and absorbed all the water), stir it with a spoon to make it fluffy. Add chopped onions, tomatoes cut in halves and cucumber cut in cubes.
- Add fresh or dried herbs, lemon juice, extra virgin olive oil, salt and pepper for taste. Mix altogether.
