Sunflower seeds pesto

10 minutesThis green pesto is made with organic sunflower seeds - a great source of vitamin E and magnesium.

Ingredients

organic sunflower seeds 100g
- fresh basil 50g
- 2-3 cloves garlic

nutritional yeast 2 tbsp (for a cheesy, nutty flavour)

extra virgin olive oil 100ml
- 1-2 tbsp lemon juice
- Salt for taste
- Black pepper for taste
Directions
- Toasting sunflower seeds: In a dry pan for a couple of minutes, stir frequently so they don’t burn.
- Blending: Add the toasted sunflower seeds, basil, garlic, and nutritional yeast to a food processor. Pulse until everything is finely chopped and well mixed.
- With the processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency. Add more oil or a little water if you want it thinner.
- Taste your pesto and add salt, pepper, and lemon juice to your liking.
