Ingredients

canned white beans (drained)
- red pepper chopped
- fresh parsley chopped
- green pepper chopped

apple cider vinegar
- red onion (chopped)

cumin (optional)

coriander (optional)

extra virgin olive oil
Directions
- Place all the veggies in a large bowl.
- Add a olive oil, vinegar, salt, pepper, and spices.
- Mix all the ingredients.
- Add chopped parsley and mix again.
- Serve in two bowls (meal for 2 people) or share with others as side dish.
