Dried Apricots
Why are some apricots orange and some brown?
It comes down to how they are dried, and we stock both kinds:
Unsulphured (dark and sweet): dried in the sun with no preservatives, these turn a deep brown and develop a honeyed, almost caramel-like flavour. The usual choice for an additive-free diet.
Sulphured (bright and tangy): the familiar orange apricots, treated with a trace of sulphur dioxide to keep their colour and plump texture. A slightly sharper bite and a longer shelf life.
How to use them
Eat them straight from the bag as a high-fibre snack, snip them into porridge or granola, bake them into fruitcakes, flapjacks and energy balls, or add them to Moroccan tagines and couscous salads, where their sweetness balances the spices.
