Very nutritious, fulfilling, packed with protein and fibre - this salad is perfect for lunch or dinner.

Ingredients

  • butter beans canned 300g (drained)
  • pickled beetroots chopped 200g
  • 1 onion chopped
  • pickled cucumbers 4 chopped
  • olive oil 3 tbsp
  • salt for taste
  • black pepper for taste
  • mustard 2 tbsp
  • cumin 1 tsp

Directions

  1. Chop the beets, cucumber, onion.
  2. In a large bowl, add drained butter beans. Add chopped veggies.
  3. Add 1 tsp cumin, mustard, salt, pepper, olive oil and mix.
  4. Serve as a meal or as side dish.
