Butter beans stew - one pot, easy to make comforting dish for entire family. 

Ingredients

  • butter beans (1 large can)
  • 1 onion (chopped)
  • 2 carrots (thinly chopped)
  • 1 can of tomatoes
  • tomato passata 4 tbsp
  • 4 potatoes (cut in small cubes)
  • 2 cups of water
  • 4 bay leaves
  • Jamaican pepper (3-4)
  • cayenne pepper ½ tbsp
  • sea salt 1-2 tsp
  • extra virgin olive oil
  • freshly chopped parsley (optional)

Directions

  1. In medium size pot, heat up some oil, add chopped onions and fry for a few minutes.
  2. Add canned tomatoes, passata and stir.
  3. And potatoes, carrots, bay leaves, salt, Jamaican pepper and stir.
  4. Add water and leave it to boil. Cover with a lid and cook for about 20 minutes.
  5. Add drained butter beans. Add more salt for taste (if needed) cayenne pepper and cook for about 10 minutes.
  6. Served topped with freshly chopped parsley.
