Healthy and tasty salad with spinach, winter fruits like orange, grapefruit and pomegranate, pecan nuts and blue cheese, dressed with a bit of olive oil and balsamic vinegar. It will make a great option for lunch or lighter dinner. 

Ingredients

Directions

  1. On a large plate, make a bed of spinach leaves.
  2. Top with with slices of orange and grapefruit.
  3. Top it with a handful of pomegranate and pecans.
  4. Top it with crumbles of blue cheese.
  5. Top it with a grated orange peel.
  6. Add a pinch of salt and freshly cracked black pepper.
  7. Drizzle with agave or honey, olive oil and vinegar. Enjoy with a slice of toasted whole grain bread.
