Easy to make veggie lunch the entire family will love! Dairy-free and egg-free, and simply delicious. These courgette fritters are made with spices and flaxseed. 

Ingredients

  • 1 large courgette
  • ground flaxseed 4 tsp (for the flax egg)
  • sea salt for taste
  • black pepper for taste
  • ground garlic 2 tsp
  • ground coriander 2 tsp
  • paprika ½ tsp
  • ground cumin 1 tsp
  • 4 tbsp of chickpea flour
  • 2 tbsp of corn flour
  • sunflower oil for frying

Directions

  1. In a large bowl, grate the entire courgette. Set aside for 15 min.
  2. Prepare the flax egg: mix 4 tsp of ground flaxseed with tbsp of water. Adding flaxseed will help to combine all the ingredients.
  3. Remove the juices from the courgette.
  4. Add chickpea flour, corn flour and the spices. Mix.
  5. Add the flax egg and mix with the rest of the ingredients.
  6. Heat up the pan. Add some sunflower oil.
  7. Form round-shaped patties from your courgette ‘dough’. Fry for a few minutes on each side.  
  8. Serve with tzatziki or vegan mayonaise.
