Try this satisfying cous cous salad! Made with crisp vegetables, fresh herbs, and a zesty vinaigrette. Perfect as a light lunch, a vibrant side dish, or an easy meal-prep staple.

Directions

  1. In a medium size bowl place the cous cous and salt, add boiling water (1 cm above the cous cous) Leave it for 5 min.
  2. Chop the the onion, tomatoes and herbs.
  3. In a large bowl, combine all the chopped ingredients, add salt and pepper for taste.
  4. Add cous cous, oilve oil, lemon juice and mix with tomatoes and herbs.
  5. Served topped with some sunflower and pumpkin seeds!
