Easy Peasy Lemon Strawberry Chia Salad Dressing

This refreshing salad dressing is made in a snap - delicious, simple and nutritious!

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 6 fresh strawberries, washed, stems removed (about 1/3 cup when blended)
  • 2 Tbsp fresh lemon juice (usually 1/2-1 lemon)
  • 1 Tbsp golden balsamic vinegar
  • 1 tablespoon apple cider vinegar
  • 2 Tsp maple syrup or agave
  • 1 Tbsp chia seeds
  • salt & pepper to taste (I like to use pink himalayan salt & rainbow peppercorn

Directions

  1. Add Strawberries into a blender, pulse until smooth.
  2. Whisk together all ingredients in a small bowl until well combined
  3. Season with salt and pepper to taste
  4. Drizzle the dressing on the salad, toss until well coated.
  5. Serve and enjoy!
