This sponge matcha cake is light and fluffy. This matcha cake is made with organic matcha powder, a green tea powder made in Japan from finely ground green tea leaves. Thanks to it, this cake has a beautiful green colour and a slightly earthy flavour.

This sponge matcha cake is light and fluffy. This matcha cake is made with organic matcha powder, a green tea powder made in Japan from finely ground green tea leaves. Thanks to it, this cake has a beautiful green colour and a slightly earthy flavour.

  1. In a medium bowl, combine dry ingredients: flour, erythritol and baking powder.
  2. In another bowl combine soy milk with oil. Mix dry ingredients with wet ingredients.
  3. Add matcha and lemon juice. Mix until the dough is smooth.
  4. Prepare the bundt pan - grease it generously with spray vegetable oil or use a pastry brush to brush oil.
  5. Spread some flour all over it. Heat up the over 180 C.
  6. Bake it for 50-60 minutes. To make sure the cake is ready insert a wooden toothpick near the centre of the cake. If the toothpick comes out clean, the cake is done. Enjoy with a cup of green tea!
