Ingredients
- chickpea flour
- plan based milk
- black salt kala namak
- sea salt
- chives choppes
- small courgette thinly sliced
- dried organic thyme
- green peas frozen 200 g or canned (1 can)
- grated parmesan (optional)
- basil (fresh, optional)

olive oil
- black pepper
Directions
- Heat up the pan. Add some oil and thinly chopped courgette, chives, frozen peas. Saute for 5 min.
- In the meantime, prepare the chickpea eggs. In a small bowl, add 150g chickpea flour. Add 200 ml milk, thyme, black salt and whisk until well combined, smooth and fluffy.
- Pour the chickpea mixture over the veggies in the pan.
- Fry on both sides for a few minutes until the ‘eggs’ are cooked.
- Top with fresh basil and grated parmesan.
