This easy egg-free frittata with is made with simple healthy ingredients: chickpea flour, green peas, courgette, chives and herbs. Delicious, fluffy, vibrant colour - perfect for summer brunch or dinner. Ready in 20 min! 

Ingredients

  • chickpea flour
  • plan based milk
  • black salt kala namak
  • sea salt
  • chives choppes
  • small courgette thinly sliced
  • dried organic thyme
  • green peas frozen 200 g or canned (1 can)
  • grated parmesan (optional)
  • basil (fresh, optional)
  • olive oil

  • black pepper

Directions

  1. Heat up the pan. Add some oil and thinly chopped courgette, chives, frozen peas. Saute for 5 min.
  2. In the meantime, prepare the chickpea eggs. In a small bowl, add 150g chickpea flour. Add 200 ml milk, thyme, black salt and whisk until well combined, smooth and fluffy.
  3. Pour the chickpea mixture over the veggies in the pan.
  4. Fry on both sides for a few minutes until the ‘eggs’ are cooked.
  5. Top with fresh basil and grated parmesan.
