  1. In a medium size pot, add a bit of olive oil, chopped onion and garlic.
  2. Simmer for a few minutes.
  3. Add pumpkin, water, salt and cook for 20-30 min until soft.
  4. Add ginger, nutmeg and blend using a blender until smooth.
  5. Serve with topped with a sprinkle of olive oil and cracked black pepper.
