Easy and delicious Spanish soup with the addition of oats. Served with sourdough toast, it will make a light but fulfilling lunch. 

Ingredients

Directions

  1. In a pot, blend all the ingredients until smooth.
  2. Add salt and pepper to taste. Mix.
  3. Add a spoon of oats on the bottom of the bowl before pouring the soup.
  4. Decorate with some chopped peppers and cucumbers, and a dash of extra virgin olive oil.
  5. Serve cold with a few toasted bread slices.
