This spiced vegan carrot banana bread is moist and full of flavour, with a hint of cinnamon and a crunch of walnuts. It will make a great healthy snack or dessert. 

Ingredients

  • 3 ripe bananas
  • all-purpose flour 350 g
  • 2 carrots
  • true Ceylon cinnamon 3 tsp
  • walnuts (broken or chopped
  • coconut sugar 100 g
  • sunflower oil 80 ml
  • baking powder 2,5 tsp
  • baking soda 1 tsp
  • Celtic salt
  • plant based milk 150 ml
  • ground ginger 1 tsp

Directions

  1. Preheat oven 180C.
  2. Grease the loaf pan.
  3. Mash the bananas and grate the carrots separately. The bananas should be ripe and soft.
  4. In a large bowl, add flour, baking powder, baking soda, spices, salt, sugar and mix.
  5. Add oil, mashed banana, plant based milk and mix.
  6. Stir in the grated carrots and walnuts and mix to combine.
  7. Bake in the loaf pan for about 60 minutes.
