Ingredients
- 150 g almond flour
- 260 g buckwheat flour or wheat flour
- 1 tsp Ceylon cinnamon
- 160 g maple syrup
- 125 ml plant-based milk
- 4 tbsp peanut butter
- 50 g almonds
Directions
- Place the flours, cinnamon powder, maple syrup, plant-based milk and peanut butter in a mixing bowl and mix with your hands.
- Leave the dough in the fridge for about 30 minutes. This will help the dough to be more flexible and the cookies will be easier to make.
- Preheat the oven to 160ºC.
- Make the cookies using your hands. Shape them as fingers (roll the dough in the right shape, keep the right size). Press the tip of each finger, to create a fingernail and place an almond on top of it. (You need enough almonds to create all fingernails!)
- Make several shallow cuts just under the finger nail, and then in the centre of each finger so the cookies look more realistic and present the finger knuckles.
- Bake the fingers for 15 to 20 minutes or until golden brown. Let them cool down completely before serving.
- Extra spooky tip before serving: Dip the bottom of each finger into the strawberry or raspberry jam to make them look like 'bleeding'. You can also spread some jam near the nail space.
