Easy vegan matcha cake

InternationalThis sponge matcha cake is light and fluffy. This matcha cake is made with organic matcha powder, a green tea powder made in Japan from finely ground green tea leaves. Thanks to it, this cake has a beautiful green colour and a slightly earthy flavour.

Ingredients
- 300 g organic wheat flour
- 100 g or 130 g sugar or erythritol
- 250 ml soy milk
- 130 ml sunflower oil
- 1 tbsp apple vinegar
- 2 tbsp matcha powder
- 2 tsp baking powder
Directions
- In a medium bowl, combine dry ingredients: flour, erythritol and baking powder.
- In another bowl combine soy milk with oil. Mix dry ingredients with wet ingredients.
- Add matcha and lemon juice. Mix until the dough is smooth.
- Prepare the bundt pan - grease it generously with spray vegetable oil or use a pastry brush to brush oil.
- Spread some flour all over it. Heat up the over 180 C.
- Bake it for 50-60 minutes. To make sure the cake is ready insert a wooden toothpick near the centre of the cake. If the toothpick comes out clean, the cake is done. Enjoy with a cup of green tea!
